New Me Time…at least that seems to be the theme with a lot of people come January each year. The gyms are filled with eager bodies and holiday eating gets overhauled. If you are someone exploring the keto then this recipe is for you! Behold the Pepperoni Plank!
A common complaint among keto followers is pizza crust… or should I say the lack there of. If you can find larger diameter pepperoni slices, you can line them up and make a larger version of this then let cool. Once cooled, top with cheese and your favorite keto toppings, broil til cheese is bubbly, then devour!
32 pepperoni slices
2 cups mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
Warm alfredo sauce for dipping but marinara is yummy, too!
In a skillet, place for pepperoni slices in a clover leaf pattern (2 x 2) then top with approximately 1/4 cup Mazzarella (give or take… should just be a pile of cheese on top of the pepperoni slices). Sprinkle Parmesan and garlic powder, then top with for more pepperoni slices. Brown the pepperoni slices until most of the fat is rendered off and the cheese is golden and bubbly. Gently press down with a spatula to make layers stick together, then flip to brown the other side. Remove from heat and let cool. Cut into planks of two. These can be used as dippers for any party dip but I like to serve with warm Alfredo sauce!
